After working with such great chefs as Bruno Verjus and Yannick Alléno, Khalid Mansour takes the reins of Le Bayadère. He gives pride of place to local, seasonal produce, sublimated to preserve its raw flavors. His commitment, rewarded in 2024 with Ecotable certification, is expressed in his sourcing choices and the techniques he uses.
